Here is my dedication to being comprehensive: I am going to write about a plant I do not like.

Why don’t I like Epazote? Because it smells intensely like varnish to me, and while I don’t mind varnish smelling like varnish, it is hard for me to get past that odor in food. Grubs I can eat but not Epazote. Yes, there are those who sing its praise such as New York City’s wild food teacher Steve Brill.

dozen times. Chenopodium ambrosioides, by the way, means ‘resembles Ambrosia’ (ragweed.) That should give you some idea of what it smells like. Its second name, is Teloxys ambrosioides, (tel-OX-ees ) (Greek telos [τέλος] “end, purpose” and oxys [ὀξύς] “sharp, acidic, acute”)  means…”sharp-ending leaf.” That name change would be a good one if it sticks. The C. album does have a leaf shaped like a goose foot. C. ambrosioides is not shaped like a goose foot but does have a leaf ending in sharply defined points.  A third botanical name is Dysphania ambrosioides, Dysphania (dis-FAY-nee-ah) is Greek from dysphanis for “obscure,” referring to the inconspicuous flowers. Frankly, if the gods like this plant it is time to be an atheist.  Oh, and they don’t make a tea out of it.  In this case, the word “tea” is used to mean an infusion, not a pleasant drink. Up until about 1940 the oil of this plant was the main oil used to treat internal worms in man and beast, dogs in particular. It was sometimes called “Baltimore Oil” after a company in that city that processed much of it. I bet that was a pleasant place to work. Modern treatments replaced C. ambrosioides oil but it is still used in many places.

Purified oil made from C. ambrosioides is very toxic. Little is known, however, about the toxicity of fresh and dried plants or how  toxic reactions occur. Signs of toxicity include salivation, increased heart rate and respiration, changes in blood chemistry, and convulsions. Oil of C. ambrosioides can cause skin reactions, and it is dangerous to inhale. The dose that gets rid of parasites is close to the toxic dose. I’m not sure I want that in my refried beans, even if it does reduce gas.

What is somewhat surprising is references to Epazote where it is native pull no punches. It is the called the stinking weed, smelly and all that. But, northern civilizations where it is not native call it lemon-ish or citronella-ish, refreshing et cetera. I think there is something drastically wrong there, but then again, my nose is Mediterranean not Scandinavian.

Unmistakably smelling of spar varnish, it is a common spice in Mexican cooking. Epazote (EP-ah-zoht) is from Nahuatl, the Aztec language, and means skunk sweat or skunk dirt. By now it should be rather clear that this plant has an odor issue.  One does not need to cultivate Epazote in Florida, or buy it. Epazote grows quite happily nearly everywhere. I might have a different view of Epazote if I had tried it cooked sometime. But, I also don’t have internal worms and I really don’t want to find out if the line between Mexican spice and Mexican worm killer is thin. I will let a chef convince me in Some dish of his choosing.

Similar looking: The composite “fireweed” Erechtites hieracifolia when young can resemble the C.ambrosioides and while the fireweed is edible, it is not too palatable. But in its favor Fireweed does not smell of varnish but more like celery oil. Also if I remeber correctly Fireweed is a bit hairy and the goosefoot food of the gods is not.

All of that said, there is a new potential use for the smelly food of the gods. A study in August 2007 showed it is effective against the protozoa that cause Leishmaniasis, a fly-carried disease which effects 12 million people in 88 countries. This may lead to new drugs to treat the disease.

Green Deane’s “Itemized” Plant Profile

IDENTIFICATION: An herb to that grows to a height of 40 inches or so. The leaves are lance shaped and toothed, flowers are small and green, seeds very small and green when fresh and black when dry. The plant has an extremely strong odor that should remind you of cleaning paint brushes or perhaps citrus. Some people have an instant allergic reaction to the plant so approach cautiously.

TIME OF YEAR: In Florida, year  round, grows tall and rank through the year.

ENVIRONMENT: Waste ground, dumps, fields, railroads, roadsides, trails, abandoned fields.

METHOD OF PREPARATION: Leaves, flowers and unripe fruits; the latter have the strongest flavor. Said to be best used when fresh but dried can be used as well.   It is used fresh in soups, salads and meat dishes. The most common usage is, however, in bean dishes, where it’s strong anti-flatulent powers are praised. Young leaves are better than old leaves, and the seeds are edible, too.

We’ve mentioned it a few times in recent newsletters but it bares repeating: Horsemint — see above — is in season and very easy to find now. Look in grassy sandy places or along paths in always dry areas. The pleasant side of the plant is that it smells nice and makes a Thyme-like spice. The naughty side of the species is that it contains Thymol which is a relaxant. Made into a tea it calms you down. How much it calms you down depends on how much you use and your personal response to it.  You can also hang some in your house as an air freshener. You can read about Horsemint here.

Crowfoot Grass, which is ripening now, is not native to North America. It’s from Africa where the species is used to make unleavened bread and a frothy beer. While crowfoot grass is easy to harvest — when ripe — the grains are tiny, eye of a needle size. You can collect about two quarts an hour — making them calorie positive —  and they can grow in large colonies making harvesting easy. Usually you collect the grains while sitting and using window screen plastic as a strainer.  The grains have a small amount of cyanide in them but drying and cooking drives that off. Though minute botanically they are a mouthful: Dactyloctenium aegyptium. That means ‘little comb fingers from Egypt.’ You can find Crowfoot Grass from Maine to California skipping the upper northwest side of the country.

The question every time you see one — left —  is which species is it? There are some 600 of them in the genus and several are edible one way or another. The one to the left is in Dreher Park. Sometimes it has a little bit of calcium oxalate in the fruit and sometimes doesn’t. So one has to taste it carefully. What you do is take a section, which is a cluster of smaller parts, and chew it. The goal is to get the juice out of it more than anything else though some pulp is edible. Last year this particular growth lightly burned my lips enough to notice but not bothersome. The young white base of the fronds are also edible Three species are commonly known as edible: Pandamus amaryllifolius, Pandanus fascicularis, and Pandanus tectorius. The latter is the most consumed of all and would be a good find. One of the more interesting things about the Pandanus is how it burns when lit. A dried Pandanus stalk can smolder for days like a baseball bat-sized cigarette. It was how some of the Aboriginals of Australia carried fire from one place to another.  Among other speces we can find in Dreher Park in the park are Coco-plums and Simpson Stoppers asl well as Java Plums. The Sea-grapes were still green. They ripen around the first of September.  The Mahoes were not yet in blossom. They are unusual in that their blossom is yellow in the morning then turn red in the afternoon. Botanist tell us that is to attract different pollinators. The blossoms also have more antioxidants in the afternoon.

Are the berries to the left edible or not? Ninety-nine plus percent of white berries are not edible. White berries are a huge warning flag saying stay away. But there are exceptions.  I can think of a few wild white berry species in the world that are edible, some in North America and one in Africa. But what of the berries pictured left? They are white American Beautyberries. Usually they are magenta when ripe. These are stark white. I have eaten a few. They taste like the colored ones. A few years ago I had a woman in New Jersey write to me and report she eats them all the time and makes jelly out of them. That’s not an official endorsement but it is about as close as one can get to knowing if they are edible. There are at least four species of Beautyberries that can spontaneously produce white berries, and there might be a man-made cultivar or two. The nose doesn’t always know.

The aroma of a wild food is the most flexible of all descriptions. This is for two reasons: Noses differ and plants differ. Taste is also quite flexible but aroma variations beat taste out. When you read in a foraging guide, or even in my articles, that a plant smells like such-and-such know that the description is quite subjective. There are several local species that elicit different descriptions even when noses are whiffing the same sample. One low-growing fruit — the Gopher Apple — has been described as smelling like pink bubble gum, a new plastic shower curtain, or no aroma at all. The smelly spice Epazote ranges in opinions from citrusy to floor varnish to industrial cleaner. Even among non-edibles the olfactory estimations can vary such as with the toxic Laurel Cherry. Some think its cyanide smells like almonds, other think they smell maraschino cherries, some can’t smell the cyanide at all (it depends on your genes.) In guide books a reported aroma is just that, a guide. It is not always for certain by any means. There’s room for aromatic latitude.

Plant Pronunciations: What’s really important is knowing the plant and whether you can eat it or not. What you call it is secondary. Common names are okay as long as you know many plants can have the same common name. “Indian Potato” comes to mind. There are two problems with common names. You and someone else could be talking about the “Indian Potato” but actually be talking about two different species. Also every plant — in theory — has one botanical name but can have virtually dozens of common names. Many times it is just easier to remember the one botanical name. Dead Latin was chosen for the naming plants because … well… it’s dead, non-changing, non-evolving. Perhaps it was also chosen by academics as a way to keep Latin from disappearing completely. Another possibility was they wanted to use naughty descriptions and if in Latin most wouldn’t know how lewd some names are. But know even when Latin was spoken it had regional accents and far flung Latin became French, Spanish, Portuguese and Romanian. At home it became Italian. There is no etched-in-granite correct way to pronounce botanical names. Hmmmm…. take Vagus. It can be said like the city, Los Vegas, or vah-GOOSE. It means literally “wandering.” And of course there are different pronunciations botanical names in American English vs British English such as with the pine genus (PINE-us, vs. PEEN-iss.)

Many “Latin” plant names are mangled Greek. Take the genus Dioscorea, the true yams. Dead Latin has it dye-oh-SCORE-ree-ah. That makes my ears hurt. It’s named after a Greek physician, Dioscorides, 40-90 AD. So I prefer thee-oh-score-REE-dez which closer to the Greek way of saying it. The only time the botanical name is truly important is to make sure the two of you are discussing the same plant. This happened recently when I received an email from Singapore about how to use the Skunk Vine.  There are several Skunk Vines (like Indian Potatoes, Hog Plums et cetera.) As we were exchanging information about Paederia foetida without the botanical name that would have been difficult. Scientific names of any species can be a personal hurdle. And some times you don’t have a choice. The majority of mushrooms do not have a common names. You just have to bite the Boletus.

Chance happens in foraging. More than once I have passed a tree several if not dozens of times but never noticed because it was not in bloom or seeding. It happened again this weekend in Dreher Park in West Palm Beach. (That’s how I discovered the barely edible Spanish Cherry Tree there a few years ago. It was fruiting when I was there.) This time my unknown tree was extremely heavy with pods and seeds and hard to miss. Unfortunately I failed to bring some seeds home with me. There was a suggestion it was a Coralwood Tree, Adenathera pavonina. Research suggests that was a correct identification. Better, it has some edible parts but not without controversy.

The Coralwood is an Old World tropical tree. In the New World it has been introduce from Venezuela to southern Florida. The species is a nitrogen fixer, provides animal forage, is a garden ornamental, and has a huge array medicinal uses. Where’s the conflict? Well… there really isn’t one. It is more like internet fog and splitting hairs.

Cornucopia II, a standard reference, says on page 152 “Seeds are eaten raw, or roasted and shelled and eaten with rice, tasting like soy beans. The husked kernels contain 25% of their weight of oil with a protein content of 39%. Young leaves are cooked and used as a vegetable.”  That is from the 1998 edition of Cornucopia II. The Internet, however, cutting and pasting from Wikipedia, likes to reference an 1889 Australian book that they say says the uncooked seeds are toxic. I happen to have a copy of that book: “The Useful Native Plants of Australia” and it does not say the seeds are toxic per se but rather the family. This is exactly what the author, J.H. Maiden, wrote on page 5:

“In India these seeds are occasionally used as an article of food. They are the size of a kidney bean. They would doubtless require boiling, or some similar preparation, for it should be borne in mind that the Leguminosae must be regarded as a poisonous Natural Order in spite of the fact that it yields some of the most valuable foods used by man and beast.”

In my foraging classes I tell students the pea/legume family is not a friendly one. What Maiden wrote is far from saying Coralwood has toxic seeds. He wrote a warning in general about the legume family (which holds true for uncooked kidney beans for example.) We are not, however, clearly off the poison hook. There has been substancial research on the species as food for humans and animals. In all the studies I read the seeds were cooked and the shell discarded The cooked seeds were made into everything from a nut milk to ground chicken feed. One research paper suggested the “toxin” might be a trypsin inhibitor.  That reduces the breakdown of digested protein thus preventing the body’s utilization of the protein. Like a protease inhibitor — also in legumes such as groundnut, Apios americana — that can lead to severe digestive upset. Cooking would reduce the trypsin inhibitor as cooking reduces protease inhibitors.  You can read more about the Coralwood here.

There are several ways to find plants while foraging. Once you study them they tend to stand out among their non-edible peers. That said I always find Kudzu with my nose: When in blossom the air smells like a room full of third graders all chewing cheap grape bubble gum. It’s an unmistakable aroma and far more intense than grapes themselves. We detected some this past weekend during a foraging class in Cassadaga. What is odd about the plant in that park is the state says it is not there (and the wild pineapples are not there either.) Out of sight, out of mind. All parts of the kudzu is edible except the seeds. The problem is the leaves have a texture issue even when cooked. It is better if they are processed by a goat into milk. Goats relish kudzu and are a solution to the invasive species. You can read more about Kuzu here.

There are between 2.2 and 3.4 million species of fungi. 2,000 or so are considered safe for human consumption. 350 species are collected and consumed as food, 25 species are widely grown commercially. 85% of the global edible mushroom production is in five genera: Lentinula, Pleurotus, Auricularia, Agaricus, and Flammulina. One of the irritating aspects of mushroom hunting is how many non-edible ones you find. Between the edible and non-edible ones are the semi-edible. Two genera come to mind, Lentinus and Favlous (and their renamed modern extensions like Neolentinus.) Favolus (whether called teniculus or braziliensis) are fairly easy to identify. Favolus is from the Dead Latin favus which means honeycomb. And indeed the underside of the mushroom is honecombed. They grow on wood — usually logs — in profusion and from a distance often makes the hunter think of oyster mushrooms. Tough even when cooked, they are 27% crude protein and 17% fiber.  Some suggest boiling them first then frying. Expect them to be tough. They absorb flavors well probably because of the honeycomb gill structure.  In the Amazon the Yanomami people eat and sell F. braziliensis and L. crinitus both of which grow here locally.) 

There is a progression in the learning, or so I think. It’s usually starts with what we call weeds, small herbaceous green things around where we live. That takes a while. One problem is everyone wants to identify all the plants they see rather than actually looking for specific edibles.  That makes the job harder. An easier way is to look for one edible or so per month when it is in season. About the time we are comfortable with low plants there are trees. They seem like difficult hunks and hard to tell apart. But trees nurtured humanity. The forest was not the dark dangerous place of fairy tales but ancient man’s grocery store, hardware store and pharmacy. Of all trees are the easiest to learn. You can study the same one 10 hours a day for a year and it won’t change much.

After one gets a few trees down the next huge  challenge is grasses. The difficulty of grasses is an almost completely new descriptive language and very small if not microscopic identification elements. Grasses are a pain in the … grasses. They can be extremely difficult. I am told by professors that grass taxonomists are so rare they can name their price and their employment is completely guaranteed. If you know a young person with an interest in biology it could be a good career. With grasses I am happy if I get the genus right, and a few of the species. The saving grace is, according to grass experts, there are no toxic native North American grasses. But many non-native grasses can be toxic… with cyanide. Grasses prepare you — psychologically — for mushrooms which overall I think are easier than grasses, certainly tastier. While perhaps not more complex they don’t live as long. Their quick growth makes them tough to learn in all their stages whereas an oak tree … is stoic.

In my classes we do sniff some cyanide-containing leaves. Is that dangerous? The short answer is no. You would have to inhale 135 ppm of cyanide some 25 minutes (at six breaths a minute) to have enough poison to affect  you. The human nose can detect the aroma anywhere from 0.5 to 5 parts per million. From a survival point of view the nose would not been too good if it didn’t detect warning amounts. Interestingly our red blood cells prefer cyanide over oxygen. Once transported to our mitochondria the cynaide shuts down energy production. In guide books a reported aroma is just that, a guide. It is not always for certain by any means. There’s room for aromatic latitude.

The Bunya Bunya and Norfolk Pine are closely related. Neither look good in landscaping though the Norfolk Pine is far more common than the Bunya Buyna locally. They both awkwardly stand out. Unlike cones of the Bunya Bunya, which one finds regularly, Norfolk pine cones are more rare. And like their relative they, too, have edible seeds. During a class in Port Charlotte we saw an immature Norfolk Pine cone. The undeveloped seeds were intensely pine flavored.   The Bunya Bunya fruits about every three years. One sees Norfolk Pines regularly but not their cones. Hopefully this tree will drop some mature cones in August which is also about when the champagne mangos in the area ripen (and rot on the ground.)

Allergic reactions. While a teacher can guarantee that a particular species is edible they cannot control for individual allergic reactions. We now have far more allergic people than half a century ago. The rate was about 3% in 1960 and 7% in 2018. Some think that has been caused by over-protective parents and no child ever unsupervised. We also know kids raised on farms have less allergies than most kids supporting the so- called hygiene hypothesis. When I was young no one ever heard of a peanut allergy or the like. As plants are chemical factories one can expect some people to have an allergic reaction to them. Among wild plants two sometimes produce a mild allergic reaction, Cucumber Weed and Epazote.  Pawpaws carry a huge warning because they can cause a rare anaphylactic shock which is a severe allergic reaction. In a class this past week a fellow had an itchy throat reaction to Hydrocotyle bonariensis, our local common dollar weed. It wasn’t a severe reaction and all is well but it is one to be mindful of.

It was a “Prunus foraging week. While rummaging around our usual class location we saw Chickasaw Plums. They are just beginning to ripen and should be around for about six weeks. The Chickasaw Plums were not completely ripe but give them a week or two.  Black Cherries are also ripening but are often more difficult to find because the birds also like them. Cherries and plums are in the same genus, Prunus, so it’s not surprising they are ripening at about the same time.  Also setting fruit are the Flatwood Plums but they are different story and are included in my related article. Lactarius indigo mushrooms are difficult to misidentify.

It’s been a strange week for edible wild mushrooms. Ringless Honey Mushrooms favor the fall but the right weather conditions in the spring — May specificially — can cause a minor occurrence of them. This this week there were sporadic reports of said about the South. I have even seem them on a Banyan in West Palm Beach in July.  I saw five agung  Lactarius indigo in Venice, Fl., this week, quite out of season. It is indeed a pretty mushroom and edible though its texture can be a tad grainy. With rains between now and the end of the month the summer mushroom season should get a good start. Hopefully by mid-June the Orlando Mushroom Group (OMG!) can have a forage. 

No plant produces more starch per acre than cattails.

If you were starving and came upon a patch of cattails (blossoming now) you would have great cause for celebration. You have found food and water. You will survive. But if you are not starving and do not have all the time in the inter-connected world you just might find cattails highly overrated. It is true that no plant can produce more starch per acre than cattails, about 3.5 tons under cultivation. And it can produce a lot of starch economically if you can mechanize the extraction. But hand extraction is time- consuming and labor intensive. It is also wet, smelly work all of which can be worsened significantly by harvesting in either cold or buggy weather. So yes, cattails are food but the time demand is such that harvesting food has to be your prime occupation. A similar argument can be made for kudzu. The roots do have edible starch but it takes a gargantuan amount of work to get the starch out, literally hours of steady pounding. It is not a calorie positive activity. It moves you closer to starvation. But, mechanize the process with some hammers run by falling water — or hammers run by a horse fed on an endless supply of grass — and kudzu becomes a reliable calorie-positive food. Times and formats change. Which reminds me I need to revisit many plants and make some new videos.

We’ve mentioned it a few times in recent newsletters but it bares repeating one more time: Horsemint — see above — is in season and very easy to find now. Look in grassy sandy places or along paths in always dry areas. The pleasant side of the plant is that it smells nice and makes a Thyme-like spice. The naughty side of the species is that it contains Thymol which is a relaxant. Made into a tea it calms you down. How much it calms you down depends on how much you use and your personal response to it.  You can also hang some in your house as an air freshener. You can read about Horsemint here.

Crowfoot Grass, which is starting to ripen now, is not native to North America. It’s from Africa where the species is used to make unleavened bread and a frothy beer. While crowfoot grass is easy to harvest — when ripe — the grains are tiny, eye of a needle size. You can collect about two quarts an hour — making them calorie positive —  and they can grow in large colonies making harvesting easy. Usually you collect the grains while sitting and using window screen plastic as a strainer.  The grains have a small amount of cyanide in them but drying and cooking drives that off. Though minute botanically they are a mouthful: Dactyloctenium aegyptium. That means ‘little comb fingers from Egypt.’ You can find Crowfoot Grass from Maine to California skipping the upper northwest side of the country.  

Classes are held rain or shine.

Last Saturday’s plant foraging class in Gainesvile almost turned into a mushroom class because we saw so many species. There were Chanterelles by the hundreds, Indigo Milk Caps and other Milk Caps and a variety of Boletes. Sunday’s class near Daytona Beach wasn’t a washout but almost was. One dry area I checked out at 8 a.m. was by 11 — with the tide and on-shore wind — almost knee deep in water. We managed to slosh on to see out local Goji Berry in blossom. Rain might be the case with my upcoming Saturday class in Ft. Pierce. By Thursday or Friday a low that went south might come back north as a rain maker. We’ll just have to see. Whether the potential rain makes it far enough north for Sunday’s class in Palm Harbor is an unknown. I hold classes in the rain unless its reaching tropical storm or hurricane conditions.

Wild and cider apples can be bitter.

Apple season is upon us, depending where you live. When I was a kid back in the BC era — Before Computers — I always associated going back to school with raiding apple trees. (We always went back to school on the Tuesday after Labor Day.) I also raided the concord grapes in the nearby hedge rows as well. The actual word for that is “scrumping” (which was an actual verb for juvenile fruit stealing long before modern slang added other meanings.) There were orchard apples trees and there were wild apple trees. Sometimes the wild apples were from cultivated apples that grew up literally from a tossed apple core. Other times they were real wild apples, small and tart if not bitter. Those were usually better off cooked by a camp fire along a river while fishing after school. I walked or biked four miles to school daily and often didn’t get home until after dark (which means I thankfully missed anything my mother tried to cook.) Where I grew up there were many abandoned homesteads with flourishing apple trees in unused yards. There is something philosophical knowing the cared-for apple tree outlived family and home. Back then there was also a greater variety of apples than even just a few decades later because of mechanization. Even when I was young there was a great diversity of apples. Some would not store at all — eating apples —  some that would stay hard for months only softening in mid-winter or spring. Others were only good for cider or cooking and or just jelly. And contrary to common belief, apples will grow in Florida. I recommend Apple Anna, a very nice blush. To read more about apples go here.

The nose doesn’t always know.

The aroma of a wild food is the most flexible of all descriptions. This is for two reasons: Noses differ and plants differ. Taste is also quite flexible but aroma variations beat taste out. When you read in a foraging guide, or even in my articles, that a plant smells like such-and-such know that the description is quite subjective. There are several local species that elicit different descriptions even when noses are whiffing the same sample. One low-growing fruit — the Gopher Apple — has been described as smelling like pink bubble gum, a new plastic shower curtain, or no aroma at all. The smelly spice Epazote ranges in opinions from citrusy to floor varnish to industrial cleaner. Even among non-edibles the olfactory estimations can vary such as with the toxic Laurel Cherry. Some think its cyanide smells like almonds, other think they smell maraschino cherries, some can’t smell the cyanide at all. In guide books a reported aroma is just that, a guide. It is not always for certain by any means. There’s room for aromatic latitude.

Plant Pronunciations: What’s really important is knowing the plant and whether you can eat it or not. What you call it is secondary. Common names are okay as long as you know many plants can have the same common name. “Indian Potato” comes to mind. There are two problems with common names. You and someone else could be talking about the “Indian Potato” but actually be talking about two different species. Also every plant — in theory — has one botanical name but can have virtually dozens of common names. Many times it is just easier to remember the one botanical name. Dead Latin was chosen for the naming plants because … well… it’s dead, non-changing, non-evolving. Perhaps it was also chosen by academics as a way to keep Latin from disappearing completely. Another possibility was they wanted to use naughty descriptions and if in Latin most wouldn’t know how lewd some names are. But know even when Latin was spoken it had regional accents and far flung Latin became French, Spanish and Romanian. At home it became Italian. There is no etched-in-granite correct way to pronounce botanical names. Hmmmm…. take Vagus. It can be said like the city, Los Vegas, or vah-GOOSE. It means literally “wandering.” And of course there are different pronunciations botanical names in American English vs British English such as with the pine genus (PINE-us, vs. PEEN-iss.)

Many “Latin” plant names are mangled Greek. Take the genus Dioscorea, the true yams. Dead Latin has it dye-oh-SCORE-ree-ah. That makes my ears hurt. It’s named after a Greek physician, Dioscorides, 40-90 AD. So I prefer thee-oh-score-REE-dez which closer to the Greek way of saying it. The only time the botanical name is truly important is to make sure the two of you are discussing the same plant. This happened recently when I received an email from Singapore about how to use the Skunk Vine.  There are several Skunk Vines (like Indian Potatoes, Hog Plums et cetera.) As we were exchanging information about Paederia foetida without the botanical name that would have been difficult. Scientific names of any species can be a personal hurdle. And some times you don’t have a choice. The majority of mushrooms do not have a common names. You just have to bite the Boletus.

While driving through the middle of the peninsula this week I noticed Lambsquarters in their most common seasonal place: Citrus groves. Look for them in not only well-tended groves but poorly maintained ones as well. They like the disturbed soil that annual harrowing creates. In Eagle Lake an old grove had been cleared for housing. Lambs Quarters were taking advantage of turned soil.

Lambsquarters, also known as Pigweed, Fat Hen, and Chenopodium album, was a common weed in rural Maine where I grew up. It was one of the first edible wild plants I learned as a kid and rather unintentionally. We didn’t have a lawn so my father sprinkled several wheel barrows of chaff from the haybarn on the the designated soil. The first crop that spring was wild mustards which I knew were edible. The second crop was Lambsquarters. I didn’t know they were edible until a neighbor one day asked if he could take several five-foot tall plants home for supper. I added them to my “edibles” list. Other comestibles around the house were wild raspberries, apples, grapes, choke cherries, strawberries, blueberries, dandelions, sand roses and violets called “Johnny Jump Us.” They grew near the septic drank drain. My mother enjoyed eating them despite the aromatic surroundings.  You can read about the Lambsquarters here. 

Lambsquarters is also in the Goosefoot family and related to a “grain” you might have eaten — Quinoa — which is a Chenopodium quinoa.  It’s a relative of several weeds most of us have growing in our neighborhood. And the answer to the next question is yes, our local Goosefoots/Chenopodiums have edible seeds (including Chenopodium ambrosioides, also called Epazote.) The only precaution is like Quinoa all Chenopodiums seeds must be soaked before consuming to remove bitter saponins (a natural, bitter soap.)

There are several “edible” Passiflora locally but only a couple worth eating in my tender-tummy opinion: P. incarnata and P. foetida. They both have a tart-sweet flavor and the entire fruit is edible, seeds, pulp and skin. I have eaten both but not in huge quantities, usually one or two at a time. A couple that are marginal are P. lutea and P. suberosa. I see P. lutea often but not P. suberosa which tends to grow further north. During a foraging class this week we saw P. lutea and it was fruiting. I’m a bit concerned in that I have seen some websites say P. lutea leaves can be used medicinally like P. incarnata. I would question that though I am not an herbalist nor a chemist (they would not let me take chemistry in school.)  But, I seem to remember a study that tested numerous Passifloras which reported they all had some cyanide in their leaves except the P. incarnata which has GABA instead (gamma amino-butryc acid.) P. incarnata was the only one, in the study at least, that did not have cyanide in its leaves and was specifically singled out. I would be careful about using any Passiflora leaves other than wild P. incarnata without thorough research first. Also avoid unripe fruit. One species, Passiflora adenopoda, from China,  is definitely fatal. You can read about Passifloras  here. 

Doveweed is a little local edible.

There are many tiny edibles that don’t get much coverage probably because they’re minute or not a great flavor, read a famine food. One of them is the Doveweed, Murdannia nudiflora. Considered one of the world’s worst weed it is often found with its relatives the Asiatic Day Flower and Spiderworts. According to the Invasive Species Compendium “its special ability to root easily at the nodes, propagating clonally through cut stems and dispersal during tillage and land preparation make this weed difficult to control. This trait coupled with its ability to adapt and survive a wide ecological window of soil types, pH, moisture availability and soil drainage makes M. nudiflora a weed to watch for potential spread into new areas in near future, and a species under the ‘alert list’ by the Invasive Species Specialist Group.” It’s a big pest for such a tiny plant, one not usually seen while you’re standing up. When you are on your knees looking for something else is when you will find Doveweed. Locally I locate it in slightly damp locations and in semi- shade. As one might guess it’s similar to Commelinas and was once in that genus. To read more about the Doveweed go here.

Botany Builder #10: Axil is a word you’ll read often in plant descriptions. It is the upper point where a leaf petiole (see previous Botany Builder #2) meets the stem or where a branch meets the stem. They should have called it a juncture rather than an axil. We wouldn’t be too interested in that rather unremarkable location except plants often sprout branches, blossoms and fruit from that spot. The Brazilian Pepper it puts on fruit where a larger stem and a leaf meet. Where that larger stem and — in this case — the leaf meet is the axil. Another member of this family — Poison Sumac — grows toxic white/light green berries out of the axil. A third member, however, does not. The edible sumac grows berries at the very end of a branch rather than at the axil. When the berries are in a bunch at the end of a branch it is called a terminal cluster. Thus berries growing out of an axil are in a far different location than a terminal cluster. Brazilian Pepper berries have been used as spice if you are not allergic to them as they are closely related to poison ivy. Using them is not recommendation. I have a video on the species here.

While foraging along the Peace River this past Saturday I noticed jelly fish in the wrack line. Many jellyfish are edible including some that are found in local waters. How did I come to eat Jelly Fish? I had a friend from Taiwan who never ordered from the menu at Chinese restaurants. It was always off-the-menu and then after much discussion with the waiter and sometimes the chef. One of those chats produced a dish of jellyfish. I was hooked. It was very tasty and jellyfish can be caught while casting for other fish. (I like castnetting and am a castnet junkie.) While a substantial food in many parts of the world I’m not sure jellyfish locally would qualify as a staple because catching them by hand is by chance (which does increase however when in season.) Despite their name Jelly Fish are also mostly water and need to be desiccated immediately, not a small process. It all depends on how hungry you are and how many of them you have. Panic Grasses are both native and non-native.
Panic Grass is easy to spot but identifying the exact species is a challenge.

Panicum is a very common group of edible native and non-native grasses in Florida and North America. If you can’t figure out which species you have don’t be discouraged. There are 16 different main species and if you add sub-species and varieties they number about 90 (and often different microscopically.)  Like most grasses one can eat the grains and the blades. Usually the blades are dried, powered and used to thicken soups. They can also be used to add heft to meat loafs or bread and increase the satiation factor. While the grain of Panic Grass can be eaten raw it benefits greatly by being cooked, usually parched in a hot pan or slightly roasted. You can also boil it like a porridge. I think the most commonly recognized non-native edible Panic Grass is “Guineagrass.” It was introduced into Louisiana in 1813.

(As an aside it’s important to remember there are no toxic native North American grasses. It’s the non-natives grasses that can be toxic and usually from small amounts of cyanide. It doesn’t take a lot of cyanide to make you sick but preparation can drive it off.  So beyond identification the next question regarding any grass is whether it is a native or not.)

Not all noses sniff the same.

The aroma of a wild food is the most flexible of all descriptions. This is for two reasons: Noses differ and plants differ. Taste is also quite flexible but aroma beats it out. When you read in a foraging guide, or even in my articles, that a plant or mushroom smells like such-and-such know that the description is quite subjective. There are several local species that elicit different descriptions even when noses are whiffing the same sample. One low-growing fruit — the Gopher Apple — has been described as smelling like pink bubble gum, a new plastic shower curtain, or no aroma at all. The smelly spice Epazote ranges in opinions from citrusy to floor varnish to industrial cleaner. Even among non-edibles the olfactory estimations can vary such as with the toxic Laurel Cherry. Some think its cyanide smells like almonds, other think they smell maraschino cherries, some can’t smell the cyanide at all. In guide books a reported aroma is just that, a guide. It is not always for certain by any means. There’s room for aromatic latitude.

“You Can’t Say That In Latin.”

Plant Pronunciations: What’s really important is knowing the plant, and whether you can eat it or not. What you call it is secondary to that. Common names are okay as long as you know many plants can have the same common name. “Indian Potato” comes to mind. There are two problems with common names. You and someone may be talking about an “Indian Potato” but actually be discussing two different species. Also every plant — in theory — has one botanical name but can have virtually dozens of common names. Many times it is just easier to remember the one botanical name than numerous common names for the same plant.

Dead Latin was chosen for the scientific naming plants because … well… it’s dead, non-changing, non-evolving. Perhaps it was also chosen by academics as a way to keep Latin from disappearing completely and to exclude folks. But know even when Latin was spoken it had regional accents. Far flung Latin became French, Spanish and Romanian. At home it became Italian.  There is no etched-in-granite correct way to pronounce botanical names. And of course there are different pronunciations of botanical names between American and British English such as with the pine genus (PINE-us, vs. PEEN-iss.)

As a student of Greek I choose to pronounce some “Latin” botanical names the Greek way because Dead Latin is half bastardized Greek and half bastardized Etruscan. Take the genus Dioscorea, the true yams. Dead Latin has it dye-oh-SCORE-ree-ah. It is named after a Greek physician Dioscorides, 40-90 AD. So I prefer thee-oh-score-REE-ah, closer to the Greek way of saying it. The only time the botanical name is truly important is, like above, to make sure the two of you are talking about the same plant. This happened recently when I got an email from Singapore about how to use the Skunk Vine.  There are several Skunk Vines. As we were exchanging information about Paederia foetida without the botanical name that exchange would have been difficult. And sorry folks but a lot of mushrooms don’t have common names. You just have to bite the fugal bullet and remember Dead Latin.

One of the most common “weeds” purslane is also among the most nutritious. It’s not native to North America — India actually — which might explain why Americans are about the only population on earth that don’t eat it regularly. It Greece it is one of several wild green collectively called “horta” though purslane itself is called Glistrida, glis-STREE-dah. It’s served in a wide variety of ways from a little olive oil and salt to more elaborate dressings. Here’s how the Cretans like to serve it, croutons optional:

Common Edible Purslane

1 large red ripe tomato, cored and sliced into wedges or diced
1/2 medium or 1 small cucumber, peeled, and sliced, seeding optional
1/2 a small onion, very thinly sliced
Feta cheese (as much as you like to eat in a salad)
5 or 6 stalks of purslane, rinsed then chopped (use all but the thickest stems. They are better picked.)
A couple of sprigs of basil
Kalamata olives
Salt to taste
Mild vinegar
Good olive oil
A sprinkle of oregano

Combine tomato, cucumber, onion, feta, purslane, basil leaves, olives, toss to combine.  Sprinkle with a pinch of salt or to taste. Add a few drops of vinegar, top with olive oil. sprinkle with dried oregano. In the wild pick only purslane with simple, small yellow blossoms. To read more about purslane click here.

PIndo Palm wine in the making.

The Pindo Palm wine was wonderful. I’ve been making wine and beer for over 30 years. My best was watermelon wine: It came out like a fine Rhine Wine. The worst we won’t discuss. Here you see the Pindo fruit wine just before I racked it the second time and added 24 ounces of organic brown sugar.  While the yeast one uses can make a significant difference sugar choices can as well. They can “throw” flavors.  Table sugar (sucrose and fructose) is not a good sugar for making beer because it tends to throw a wine-ish flavor. However it’s good for making cider. Corn sugar (dextrose) is preferred for beer in that it does not throw a flavor, or if it does as some argue, it compliments beer. Brown sugar, which is part fructose, has a hint of molasses. As the Pindo Palm fruit is on the fruity wild side brown sugar fits into the flavor profile well. Agave sugar would have work, too. Pindo Palm wine clears poorly and will never have the clarity of a grape wine. There’s too much pectin in the juice (even with a pectin enzyme added to reduce it.) The wine will always be a bit cloudy… but after 14 glasses one does not notice.

Some wild plants make themselves difficult to miss like the Eastern Coral Bean above.  It grows in a drab environment of saw palmettos and scrub oaks. To get pollinated by Hummingbirds it throws on a splash of red. That helps us find it, too. Later it displays large toxic red beans with a black spot (I think to mimic a bug.) Birds find those seeds and spread them around. We cannot eat the seeds but we can eat the blossoms. I boil them first (they turn green) then I mix them with scramble eggs. The 2017 Florida Herbal Conference is now history. The weather and plants cooperated. It was the sixth annual conference and my sixth time there talking about edible wild plants. Herbal students over three days got to see a lot of seasonal edibles, some choice, some marginal. Among the plants we saw were: Bitter Gourd, Caesar Weed, Camphor Tree, Cucumber Weed, Dollarweed, Epazote, False Hawk’s Beard, Fireweed, Gotu Kola, Grapes, Lamb’s Quarters, Oaks, Oxalis, Pines, Poor Man’s Pepper Grass, Smartweed, Smilax, Sorrel, Southern Wax Myrtle, Spanish Moss, Spanish Needles, Sweet Bay, Sword Ferns, Tallow Plum, Turk’s Cap, Usnea, Violets, Water Hyacinth, Western Tansy Mustard, West Indian Chickweed, Wild Pineapple, and Willow.

Among the medicinal plants I took to class (for show only as I am not an herbalist) was Mistletoe. Like everyone I have been trained to give this species (Phoradendron leucarpum) a wide berth because it’s “poisonous.” However we do have to remember the words of  the Swiss-German botanist Paracelsus: “sola dosis facit venenum”  the dose makes the poison. Modern doctors — at least the sharp ones  — say a poison is dose, time and host response. I can remember when a TV newscaster here in Florida died from drinking too much water, not an uncommon way to die. And history records that some killers conditioned themselves with poison (usually arsenic) so they could withstand a fatal dose whilst they gave a fatal dose to a dining companion or spouse. So what might one mistletoe berry and one mistletoe leaf do to someone? I cannot say but I did see an herbalist consume one mistletoe berry and one mistletoe leaf.  Interestingly among the side effects of Mistletoe “poisoning” is to lower blood pressure. As I am not an herbalist I can’t recommend said. But I can say I have seen, in person, someone eat Mistletoe and someone eat Poison Ivy. (Natives used the latter topically to get ride of warts.)

There were also a few conversations about whether Willow bark (the original crude from of aspirin) decreases clotting (like aspirin) and can it trigger Reyes Syndrome in children. Opinions were split on whether Willow bark reduces clotting (however moldy clover can.) And there was no clear view on Willow bark and Reyes Syndrome and probably never will be. Identified in 1926 only one child in a million gets Reyes from aspirin.  While that is decades after the creation of modern asprin compounds it’s doubtful if a million children have ever been treated with Willow bark or ever will be. Unless there is an unfortunate chance example we will probably never know if Willow bark triggers Reyes in children.

As far as I know this next plant is not edible or medicinal and probably should not be mentioned in a newsletter about edible wild plants. However, it’s  commonly seen, people do inquire about it, and for a “Daisy” it has if not a unique aroma certainly an unusual one.” Locally called Green Eyes, Berlandiera lyrata has blossoms that smell like cocoa or unsweetened chocolate. The fragrant parts of the blossom are the stamen which attract beneficial insects. Also called the “Chocolate Daisy” it grows in moderately moist to moderately dry areas and can be as tall as two feet. I seem to always find it in dryer areas. Stalks are leafless. The “green eye” portion is the center of the flower before its covered with tiny blossoms which then gives it a maroon color. You can pull the rays to smell the chocolate or crush a blossom. Locally it can bloom nearly year round.

Also making itself better know this spring is a Dandelion relative, the False Hawk’s Beard. While one can find it all year the edible favors the spring. It’s a very common lawn invader and can occasionally get up to a couple of feet tall. Young leaves are eaten raw, older leaves which can be tougher and a bit bitter, can be boiled. I have a Croatian friend who also cooks up the roots, too.  They can be easily distinguished from the Dandelion by the flower stalk which is branched (unlike the Dandelion which has one straight stalk.) Also the False Hawk’s Beard can have blossoms in all  stages of development at the same time, unopened,  open, and going to seed. You can read more about the False Hawk’s Beard here.

Florida Herbal Conference 2016 is now history. Well over two dozen teachers brought nearly twice as many classes to hundreds of attendees during the three-day event. As in the past, it was a sold-out affair long before the first class began on Friday. By the last class Sunday new knowledge was learned, new friends made, and commitment to the cause renewed.

Barely a seat was unfilled in the big tent for Paul Stamets Friday night keynote presentation.

Classes ranged from herbalism to ethnobotany to permaculture. My small part was teaching three classes on wild edible plants. By an interesting coincidence, or great minds think alike, over Friday supper another teacher and I, in this case Mycol Stevens, talked about shikimic acid and glyphosate (Roundup.) They have different but related functions, one as a key ingredient in the base material to inhibit influenza (essentially killing it by sequestering it) and the other a wide-spread plant killer that inhibits a plant’s shikimic pathway (killing the plant.) What a surprise when the keynote speaker of the evening, Paul Stamets, our highest-profile fungi expert in the United States, perhaps the world, touched upon those in his presentation. (To read more about shikimic acid go here then scroll down.) Stamets also outlined the influence mitochondrial chemicals will have in the future from saving bees to eliminating herbicides.

As in previous years it was an excellent event and at a new location in Lake Wales, Fl. You will be able to sign up for the 2017 Florida Herbal Conference soon. Plan on being there. As I mentioned Poor Man’s Pepper Grass above let me tell a story about it that begins with estrogen, a somewhat unusual place to start. Some plants you eat can increase estrogen in your body, some can lower it, whether you’re female or male. The Cruciferae Clan contains many common vegetables which through various ways reduce estrogens or their subsequent metabolites: Cabbage, Broccoli, Kale, Brussel Sprouts, Turnips, Radishes, Mustards et cetera.

Next came a little coffee shop on wheels at the Winter Park Farmers’ Market on Saturdays. I visit now and then and get a cup of decaffeinated coffee. There’s been a sign there for a long time offering to make me a cup of Maca. I knew it was a South American plant that has been used as a food staple and a source for beverages. Among its claims is to help intimate relationships. It might do this by lowering his level of a particular form of estrogen, estradiol, while also raising testosterone, a win win within reason.

The third step was realizing that Maca is a Lepidium, a close relative to Broccoli. Which species Maca is, in the genus, is a bit fuzzy. The original was called L. meyenii but it has been controversially dubbed L. peruviana. All that information lay dormant in my memory until recently when I actually looked at some Maca for sale in a health food store. It said Lepidium ssp. which means several species, not just one. That is when I made the leap and if you have taken my classes you know where this is going: We have a local Lepidium which is also found in much of North America, L. virginicum.

The entire plant of “Poor Man’s Pepper Grass” is edible, including the root. And while it is peppery it is not always peppery. When it dries and turns brown the wasabi-like sting goes away. What I wonder is if it is dried, and or dried and roasted, will Poor Man’s Pepper Grass make a Maca-like beverage? The plant does not put on a big root and grinding it could be a bit of a chore, but, it might be “free” Maca. It’s an experiment on my list of things to do. It would certainly cost less than boughten Maca.

It’s a question I am asked often: Is seaweed edible? The answer is a qualified yes. Nearly all seaweed, or as some like to call them, sea vegetables, are edible. The problem is they are not all palatable, or tasty. There is one species in cold northwestern waters, Desmarestia ligulata, that has hydrochloric acid in it. That makes itself known quickly. But the same seaweed has been used as a source of acid for making pickles, diluted I am sure. In the Caribbean there is a blue-green algae, Cyanobacteria, that has been linked to ciguareara poisoning (and why we don’t eat Barracuda longer than your forearm.) And there might be some toxic red seaweed in the Southseas as well. The number of toxic seaweed are few. There shouldn’t be any locally. As for palatability, that is a different issue. I think I have written about five seaweeds on the parent website. I was also musing recently how widespread a genus of seaweed can be. In Japan a particular seaweed, Porphyra yezoensis,  is called Nori and is quite popular. The Scottish call it Laver (Porphyra umbilicalis. Scotland and Japan are a long ways apart, no matter how you travel, ye they share a seaweed genus. For me seaweed is always a taste test. If I like it, it goes home with me, if not, no. Also know you can have free-floating seaweed, anchored seaweed, and some species that do both. The point is know the difference so you take home fresh seaweed.
